  • Cooking oil for frying (avocado oil, coconut oil, or ghee)

Ingredients for Lemon Glaze:

  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons low-carb sweetener of choice (such as Swerve or monk fruit sweetener)
  • 1 tablespoon coconut aminos
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 teaspoon arrowroot powder or xanthan gum (optional, for thickening)


  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the chicken pieces with coconut aminos, almond flour, coconut flour, sesame oil, garlic powder, onion powder, ginger, salt, and pepper. Mix well until the chicken is well coated.
  3. In another bowl, beat the eggs.
  4. In a third bowl, mix together the crushed pork rinds and sesame seeds.
  5. Dip each chicken piece in the beaten eggs, then coat it in the pork rind mixture. Repeat for all chicken pieces.
  6. Heat the cooking oil in a large skillet over medium-high heat.
  7. Add the chicken nuggets to the skillet and cook for about 2-3 minutes on each side, until golden brown.
