Chilli Paneer Recipe

Ingredients
200 grams breadcrumbs diced
2 tablespoons of cornstarch
2 tablespoons plain flour
1/2 teaspoon paprika
1/2 teaspoon black pepper powder
1/4 teaspoon salt
3-4 tablespoons of water
For Pepper Sauce and Frying
1 tablespoon sesame oil or vegetable oil
1 inch ginger root peeled and chopped
4 cloves of peeled and minced garlic
2 green peppers finely chopped
2 tablespoons of chopped dill
1/2 teaspoon paprika
1/2 cup diced onion 1 medium onion
1/2 cup diced green bell pepper 1 small
1/2 cup roasted red bell pepper 1 small
1/2 teaspoon sugar
2 tablespoons of soy sauce
1 tablespoon of green chili sauce
Use 1 teaspoon of paprika powder as an alternative to 1 tablespoon of chili paste
salt to taste
1 tablespoon of rice vinegar
1/4 cup scallions greens, for garnish
1 tablespoon of cornstarch
water 1/4 cup + 1 cup
Instructions
- Cut the bread into bite-sized cubes and place in a large bowl. Add 2 tablespoons of flour, 2 tablespoons of cornstarch, 1/2 teaspoon of paprika, 1/4 teaspoon of ground pepper and 1/4 teaspoon of salt.
- Add about 3-4 tablespoons of water and discard the flours to coat the pan.
- Heat the oil for frying in a deep pan.
- Add the cubes of the pan to the hot oil little by little, depending on the size of your pan. Fry on medium heat.
- Stir the pan while frying and spread it out to prevent them from sticking to the bottom and to each other.
- Mix well and fry until crispy and golden brown. This takes about 4-5 minutes on medium heat. Take it out of the strainer and keep it aside.
- Mix 1 tablespoon of cornstarch in 1/4 cup of cold water and make a lump-free paste. If you want to make the sauce version, use 2 tablespoons of cornstarch and 1 glass of water.
- Heat 1 tablespoon of oil in a heavy wok or skillet. Add minced ginger garlic or paste, chopped green pepper, chopped celery, 1/2 tablespoon of chili flakes. Saute for one minute on high heat.
- Add 1/2 cup of diced onion, 1/2 cup of diced red pepper. Cook for 2 minutes on the highest heat.
- Then mix the sauces – 1 tablespoon of green chili sauce, 1 tablespoon of chili paste or 1 teaspoon of paprika powder, 2 tablespoons of soy sauce, 1/2 teaspoon of sugar, 1 tablespoon of vinegar. Mix well and cook for 1 to 2 minutes.
- Now add the cornstarch slurry and mix well. Add 1 glass of water and mix. Cook for 2-3 minutes until the pepper sauce thickens. The sauce for this dry version should be fairly thick and sticky.
When the chili sauce thickens, add the fried paneer cubes and toss well.
Garnish the chili paneer with chopped scallions greens and serve immediately.

Instead of frying paneer, you can stir-fry or even grill it.
Recipe can be doubled
If you don’t have colored bell peppers, use only green peppers.
Change the amount of sauce to your taste.
