ingredients
LINEN EGG REPLACEMENT
- 1 tablespoon flaxseed/ground flaxseed
- 2 tablespoons of warm water
VEGAN BUTTERMILK SUBSTITUTE
- 2 cups non-dairy milk
- 2 tablespoons of lemon juice
ADDITIONAL MATERIALS
- 2 cups all-purpose flour
- ¼ cup cocoa powder
- 1 tablespoon of baking powder
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- 4 tablespoons vegan butter, melted
- 1 tablespoon of vanilla extract
- Optional: ¼ cup mini chocolate chips
Instructions
Make the Flax Egg: Combine the ground flax seeds and water in a small bowl and set aside until ready to use.
Make Vegan Buttermilk: Combine milk and lemon juice in a small bowl and let sit for five minutes.
Make the waffle:
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, mix the flour, cocoa powder, baking powder, brown sugar and cinnamon.
- In a separate small bowl, whisk together flax eggs, vegan buttermilk, melted butter, and vanilla extract.
- Add the wet ingredients to the bowl with the dry ingredients and mix just until combined – be careful not to over-mix! A few small lumps are fine. Fold in optional chocolate chips.
- Spray your waffle iron with nonstick spray and add enough dough to fill the waffle iron, leaving about 1 inch on the edge. I use 1 cup of batter in my 8” waffle iron. Bake the batter until the waffles are golden brown and crisp on the edges – about 3 minutes.
- Repeat with remaining waffles.
