Cranberry Orange Cake Loaf
This Cranberry Orange Cake Loaf is a delicious festive treat. Made with cranberries and oranges for a fresh yet sweet loaf. So simple and easy to whip up for your next holiday gathering.
Ingredients
- 2 1/3 cups all-purpose cups flour, spoon and level, do not pack
- 2 teaspoons of baking powder
- 1 teaspoon of baking powder
- ¼ teaspoon salt
- 1/2 cup white sugar, I used cane sugar
- ½ cup softened butter or canola oil
- 1 cup of non-dairy milk
- 1 teaspoon apple cider vinegar
- ⅓ cup applesauce
- ½ cup orange juice I used fresh orange juice
- 2 cups fresh cranberries
- 1 teaspoon orange zest
Instructions
- Preheat your oven to 350°F. Line your 9-inch x 5-inch loaf pan with parchment paper or spray with nonstick spray and set aside.
- Using a large bowl, mix together the flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, add melted butter, non-dairy milk, apple cider vinegar, applesauce, orange juice, and whisk.
- Combine wet and dry ingredients and blend for 1-2 minutes. Do not over mix your dough. Gently fold in 1 cup of fresh blueberry batter.
- Pour the dough into the bread pan. Make sure there is room to expand while the cake is baking, otherwise the cake will overflow. Sprinkle ½ cup of fresh cranberries and orange zest on top.
- Bake bread for 20 minutes. Remove the loaf and cover with the roll and bake for another 25 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Allow to cool completely for at least 1 hour before slicing.

- Check if the bread is fully cooked by inserting a toothpick into the bread. If it comes out clean, it is fully cooked.

I believe that there is an error in list of ingredients. Baking powder is listed twice and I think the second baking power is supposed to be Baking soda as spelled out in the instructions
More errors in recipe found: The Ingredients list has 2 cups of cranberries on it, but calls for folding in one cup into the batter and then 1/2 cup of cranberries on top of the batter when it is in the pan but never says what to do with the other 1/2 cup of cranberries. In any case, the directions say “Gently fold in 1 cup of fresh blueberry batter.” HUH? It also says “Remove the loaf and cover with the roll. I am assuming it meant cover with foil. But the author did not proofread before publishing. I just finished baking it using my own corrections and it is cooling, so hopefully it came out OK.
