ITALIAN MEATBALLS



1 lb ground beef
2 medium garlic cloves finely chopped
1/2 teaspoon smoked paprika
1/2 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon parsley
1/2 teaspoon sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium egg
1/2 cup parmesan
1/2 cup Italian bread crumbs
oil spray
1. Combine all ingredients well.
2. Place on a baking tray and roll into equal balls. Place evenly spaced on baking tray.
3. Spray the tops of the patties with oil* and bake at 375° for about 12 minutes.
4. Cool and finally add to the soup!



SOUP
1 carrot finely chopped
2 ribs finely chopped celery
1 medium onion finely chopped
12 small white mushrooms finely chopped
3 large cloves finely chopped garlic
2 tablespoons of olive oil (for cooking vegetables)
2 cartons of broth (900ml carton)
1 tin of small chopped tomatoes (540ml)
(I used garlic and olive oil flavored canned food)
1 box of tomato paste
2 cups dry small pasta
(ditali/pasta/baby shells)
1 tablespoon of thyme
1 tablespoon basil
1 tablespoon of thyme
2 tablespoons parsley
1 teaspoon of salt
1/2 teaspoon pepper
1/3 cup parmesan (+ extra for serving)
