I made a big pot of Italian Wedding Soup Today! Thought I would share the recipe

1 lb ground pork or Hamburger ( either one is good)
1/2 C Parmesan Cheese, powdered
1/2 C Italian Bread Crumbs
1/2 tsp. Salt, 1/2 tsp. pepper
1/4 C chopped parsley ( dried is good too)
1 sm. Onion, minced
1 Egg
8 C chicken Broth ( I use 2 Large cans of College Inn)
1 Box Frozen Spinach
3 Cloves of Garlic, Chopped ( I buy it already chopped in a jar)
1/2 C Acini de Pepe Pasta
Combine the meat with the cheese, bread crumbs, parsley, onion, salt, pepper and egg.
Mix Well.
Form into tiny meatballs and place on a greased baking sheet…Bake at 350 degrees for about 15 minutes.
While meatballs are baking…In a 4 Quart Pot with a lid
Add the Broth, Frozen Spinach, salt & pepper and garlic. Boil until spinach is thawed out.
Add meatballs and bring back to a boil
Add Acini de Pepe pasta and reduce to a simmer. Cover and cook until pasta is done. About 30 minutes.
If you want you can top each bowl with shaved Parmesan cheese.
**Fresh Spinach works too, but I use frozen.
