Here’s a recipe for a Keto version of Cracker Barrel Meatloaf:

Ingredients:

For the meatloaf:

  • 2 pounds ground beef
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup unsweetened almond milk
  • 2 large eggs
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the glaze:

  • 1/4 cup sugar-free ketchup
  • 2 tablespoons tomato paste
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Swerve Brown or another keto-friendly brown sugar substitute
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
