Keto Peppermint Patties

Here’s a recipe for Keto Peppermint Patties:

Ingredients:

  • 1/2 cup coconut oil, melted
  • 1/2 cup powdered erythritol
  • 1/2 tsp peppermint extract
  • 1/4 cup unsweetened cocoa powder
  • Pinch of salt

Directions:

  1. In a medium bowl, whisk together the melted coconut oil, powdered erythritol, peppermint extract, unsweetened cocoa powder, and salt until well-combined.
  2. Pour the mixture into a silicone candy mold, filling each mold about 3/4 full. You can also use a mini muffin tin lined with cupcake liners.
  3. Freeze the candy mold for 10-15 minutes, or until the peppermint patties are firm.
  4. Remove the peppermint patties from the mold, and store them in the refrigerator until ready to serve.

Note: You can also add some melted dark chocolate to the bottom of the candy mold before adding the peppermint mixture to create a chocolate coating on the bottom of the peppermint patties. Alternatively, you can dip the peppermint patties in melted dark chocolate after they are frozen for a chocolate coating on both sides. Store any leftover peppermint patties in an airtight container in the refrigerator.
