Lemon Mug Cake

1 LG Egg
2-3 Tbsp Lemon Juice
1 Tsp Sweetener (I used Stevia)
1/4 Tsp Baking Powder
2 Tbsp Coconut Flour
2 Tbsp HWC
1/2 Pinch Salt
1/2 Tbsp Lemon Zest

In a small bowl combine all your wet ingredients including the egg and lemon zest whisk together! Next in another bowl combine all your dry ingredients, add the dry ingredients to the wet and stir till completely combined. Then add to a
7 oz.ramekin or coffee mug with wide base. Place in microwave for 90 seconds if center is still wet, microwave an additional 10 seconds.

To make the frosting:
2 Tbsp HWC
1 Tsp Sweetener (I used Stevia)
1 Tbsp Lemon Juice
1 Tbsp Cream Cheese (SOFT)!!

Whisk all together til you get a

Once the cake is done cut around the edges put a plate on top of ramekin or mug and flip over. *Caution it will be HOT!! Then I pour frosting/sauce over top and garnish with lemon zest! Delicious ????
