Here’s a recipe for Vegan One-Pot Lentil Soup:


  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 cup brown lentils, rinsed and drained
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika

  • 2 cups chopped kale

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the carrots and celery and cook for another 5 minutes or until slightly tender.
  3. Add the lentils, diced tomatoes, vegetable broth, cumin, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 30-40 minutes or until the lentils are tender.
  4. Add the chopped kale to the pot and cook for an additional 5 minutes or until wilted.
  5. Ladle the soup into bowls and garnish with fresh parsley.
