1 large onion, chopped
3 large cloves of garlic, chopped
2 or 3 stalks celery, chopped
2 large carrots, sliced
1 poblano pepper or about a cup of pepper blend
1 large box of hominy
1 large ripe tomato, grated, peeled, optional if you can’t find it
½ liter chicken broth *
15 oz. can be crushed tomatoes or tomato sauce
2 TBS Mole Paste (I ship my pastes from Guelaguetza Oaxacan Restaurant in L.A., they offer Negro, Rojo and Coloradito in trios…..the brand you find at the supermarket is inferior.) You can add more later if you want. I want a deeper flavor.
1 teaspoon cumin
salt and pepper
¼ cup red salsa…mild or spicy
1 bunch coriander, chopped
