* 1 lb or 454 g phyllo dough
* 200 g walnuts chopped
* 100 g pistachios chopped
* 100 g fine ground pistachio, (Reserve 2 tbsp of the ground pistachios to top the baklava with)
* 1 tsp cardamom
* 1 cup melted vegan butter/ or melted coconut oil if you prefer
* 1/2 cup brown sugar
* 1/2 cup maple syrup
* 1 cup water
* 1 tbsp lime juice
* 2 tbsp rosewater, optional
