Vegan Fried Oyster Mushroom & Cheesy Mac:

Ingredients: For the fried oyster mushrooms:

  • 8 ounces oyster mushrooms, cleaned and trimmed
  • 1 cup plant-based milk (such as almond or soy milk)
  • 1 tablespoon apple cider vinegar
  • 1 cup all-purpose flour or gluten-free flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying



For the cheesy mac:

  • 8 ounces elbow macaroni (or any other pasta of your choice)
  • 1 cup raw cashews, soaked in hot water for 1 hour
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon mustard powder
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 1/2 cups plant-based milk
  • 1/4 cup cornstarch
