Vegan Lasagne



Contents
1 large onion
4 cloves of crushed garlic
3 grated carrots
3 branches of finely chopped celery
About 300g chopped mushrooms I just used the button
300 g ground beef (or you can use rehydrated tvp)
1 teaspoon chopped fresh rosemary
1/2 teaspoon dried thyme
1/2 teaspoon thyme
3 1/2 teaspoons low-sodium tamari
1 teaspoon balsamic vinegar
1 tablespoon of tomato paste
1 teaspoon of coconut sugar
It’s optional to add a few drops of wine and cook before adding the tomatoes and water, which I didn’t do this time
1 800 g canned crushed tomatoes
700ml water
salt to taste
pepper to your taste
Béchamel sauce adapted from a Bosh recipe:
125ml olive oil
125 g flour
1125 ml unsweetened soy milk
3 tablespoons nutritional yeast
1/4 teaspoon nutmeg
salt to taste
pepper to your taste
dry lasagna leaves
olive oil spray
