2 tbsp coconut oil
4 cloves garlic, minced
1 inch ginger, minced
1 red chili, chopped
1 onion, diced
200g tomatoes, diced
50 ml tomato purée
1 can coconut milk
1 tbsp curry powder
1/2 tbsp cumin
1/2 tbsp garam masala
1/2 tbsp coriander, ground
1 can (19 oz) white beans, rinsed and drained
90g barley (dry), but I used leftover cooked barley
250 ml veggie stock
salt, to taste
coriander, for garnish
A dollop or two of coconut yogurt
