Zero Carb Fluffy Bread
This recipe relies on the unique properties of eggs and high-quality protein powders to create structure without the need for flour or grains. The key to its “fluffy” designation is the careful aeration of the base ingredients, which allows the loaf to expand and develop a light, sponge-like crumb. It is a versatile staple that can be sliced for sandwiches, toasted for breakfast, or served alongside your favorite soups.

Egg Whites: The primary leavening agent; whipping them to stiff peaks is essential for the “fluffy” height seen in the photo.
-
Egg White Powder or Unflavored Whey Protein: Provides the necessary structure and “dry” crumb that mimics wheat flour.
-
Cream of Tartar: Stabilizes the whipped egg whites, ensuring the loaf doesn’t collapse during or after baking.
-
Allulose (Optional): A small amount can help achieve the golden-brown crust color shown in the image without adding carbs.
-
Salt: Enhances the flavor and balances the protein profile.
