2 tablespoons olive oil

1 medium onion, finely chopped

2 carrots, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon turmeric

¼ teaspoon black pepper

½ teaspoon salt (adjust to taste)

4 cups vegetable stock

2 cans (400 g each) white beans (cannellini or navy beans), drained and rinsed

½ cup sweetcorn (fresh or frozen)

Zest of 1 lemon

Juice of 1 large lemon

½ cup full-fat coconut milk or light cream

A handful of fresh parsley or coriander, chopped

Optional: red chilli flakes for heat
Instructions

Heat olive oil in a large pot over medium heat.

Add onion, carrots and red pepper. Cook for 6–7 minutes until soft.

Stir in garlic, oregano, paprika, turmeric, salt and black pepper. Cook for 1 minute.

Pour in the vegetable stock and bring to a gentle boil.

Add white beans and sweetcorn. Reduce heat and simmer for 15 minutes.

Lightly mash some of the beans using a spoon or potato masher to thicken the soup.

Stir in lemon zest, lemon juice and coconut milk. Simmer for 5 more minutes.

Taste and adjust seasoning.

Remove from heat and garnish with fresh herbs and chilli flakes.
