Instructions

Soak the chopped eggplants in salted water for 20 minutes.
Heat the olive oil in the pan.

Rinse and drain the eggplants you have kept in salted water.
Then add it to the pot and fry for a few minutes.
After dicing the tomatoes, add them to the pot.
After adding the spices on it, add the hot water and mix it a little and close the lid of the pot.
Cook on low heat for 20 minutes.
After the vegetables are soft, turn off the stove and let it rest for 15 minutes.
Transfer to a serving plate and garnish with fresh basil.
