Instant Pot Creamy White Bean and Spinach Vegan Soup

CREAM WHITE BEAN AND SPINISH SOUP makes for a delicious dish full of delicate flavors and refreshing flavors. You’ll love this plant-based, protein-rich soup packed with super greens.

Ingredients

  • 2 cups dried beans
  • 6 cups vegetable stock or water
  • 2 cups packed chopped baby spinach
  • 1 tablespoon of oil
  • 1 medium yellow onion, small cubes
  • 1 cup carrots, small cubes

  • 1 cup celery small dice
  • 3 cloves of garlic, minced
  • 1 teaspoon All-Purpose Seasoning, I like Trader Joe’s 21 spice salute
  • 1 sprig of fresh rosemary, chopped
  • 2 tablespoons of fresh lemon juice
  • sea ​​salt, black pepper and cayenne pepper to taste

Instructions

  1. Wash and rinse the beans thoroughly under running water. Put InstantPot in saute mode. Add oil when HOT is displayed. Add the onions, carrots, and celery to the pot and stir. Sprinkle some salt. Saute the vegetables for about 5 minutes, until they are slightly softened and translucent.
  2. Add garlic, all-purpose seasoning, paprika, and rosemary to the pot. Stir and cook until the garlic is fragrant, about 30 seconds. Add the washed lentils to the pot and mix. Add the vegetable stock or water to the pot and stir once more. Cancel the saute mode. Close the lid. Choose BEAN mode or choose 30 minutes of High Pressure and let InstantPot do its magic!
  3. When the timer switches to heat, wait 10 minutes after cooking and then release the pressure. Open the lid.
  4. Put 1/4 of the soup in an upright blender. Allow to cool before mixing. (You can mix the soup several times in the pot by using a lance blender.) Add some lemon juice to the blender.
  5. Carefully increase the speed of the blender to high and blend until this part of the soup is completely liquefied. Pour this liquefied portion back into the pot. Season the soup with salt and pepper.
  6. Put the Instant Pot back into Saute mode. Add baby spinach to the pot and let the soup simmer. When spinach is slightly wilted and bright green. Drizzle lemon juice and cayenne pepper on top, adjust salt and pepper if needed. Cancel the saute operation. Your delicious soup is ready. Enjoy this bowl of creamy hot goodness!


How To Make This Soup On The Stove?

  • If you’re making stock on the stovetop, use canned baked beans to save cooking time. All other instructions are the same except for the InstantPot reference. For thicker broth, follow the steps to sauté 1/4 cup and stir. Cook the soup for 12-15 minutes over medium heat. Drizzle lemon juice and cayenne pepper on top, adjust salt and pepper if needed. * To make this soup Lean, skip the sautéing part and use 1 tbsp. extra water instead.

* BEAN setting is automatic setting in Instant Pot. 30 minutes at high pressure. You have to factor in the amount needed for Instantpot to go to press. Generally, from start to finish, this recipe is made in an hour.
