Instructions:
Preheat your oven to 350°F (175°C) and grease a round cake pan.
In a large mixing bowl, whisk together flour, sugar, baking soda, baking soda and salt.
In a separate bowl, combine custard applesauce, plant-based milk, vegetable oil, vanilla extract, and apple cider vinegar.
Pour the wet ingredients into the dry ingredients and mix gently until combined. Be careful not to overmix; A few lumps are fine.
Pour the dough into the cake mold you prepared and smooth the top.
Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
After baking, remove the cake from the oven and let it cool in the mold for about 10 minutes. Then transfer the cake to a wire rack to cool completely.
For icing:
In a mixing bowl, beat the softened vegan butter until creamy and smooth.
Gradually add powdered sugar, creamy applesauce and vanilla extract. Beat until well combined and creamy.
If the frosting is too thick, you can add more custard applesauce or plant-based milk to reach your desired consistency.
Assembling the cake:
After the cake has cooled completely, spread a layer of creamy apple cream on the cake.
If desired, place custard apple slices on top of the frosting for decoration.
You can also sprinkle chopped hazelnuts over the cream to add texture and flavor.
Slice and serve your delicious vegan custard apple cake! The cake needs to be kept in the refrigerator as it freezes. Note that baking times may vary, so check the cake as it bakes. Enjoy your unique and delicious dessert!
