- ¼ cup granulated sugar, sifted
- 1/2 teaspoon sea salt
- 1 tablespoon of melted coconut oil
- 1 cup of popcorn
Instructions
- Line up your standard muffin tin with 6 paper muffin tins.
- Combine the chocolate and coconut oil in a microwave-safe bowl. Microwave, stirring at 30-second intervals between each, until the chocolate has melted.
- Pour 1 tablespoon of melted chocolate into 6 paper cups. Put the muffin tin in the freezer for 15 minutes or in the refrigerator for 30 minutes to harden.
- In a medium bowl, combine peanut butter and powdered sugar and mix.
- Take the muffin tin out of the freezer. Add 1 tablespoon of the peanut butter mixture to the hardened chocolate. Gently tap the bottom of the muffin tin on the counter to make the peanut butter an even layer.
- Reheat the chocolate if necessary. Using the rest of the melted chocolate filling, add 1 tablespoon to the peanut butter.
- Divide the popcorn evenly and sprinkle over the chocolate layer.
- Drizzle the remainder of the chocolate over the popcorn with a spoon and sprinkle with sea salt. Put the muffin molds back in the freezer for 15 minutes to harden.
