Instructions

Sauté the vegetables
Melt butter with olive oil in a large pot over medium heat. Add onion and celery and cook for 4–5 minutes until soft and translucent. Stir in garlic and cook for 30 seconds. -

Add diced potatoes and sprinkle in the flour. Stir constantly for 1 minute to coat everything evenly. -
Add liquids

Finish the chowder
Add chopped clams with their juice, heavy cream, thyme, smoked paprika, black pepper, and salt. Simmer gently for another 5 minutes. Do not boil. -
