Enough for 3-4 people⁠
1 small white onion – finely chopped
3 cloves of garlic – minced
1 can of quality chopped tomatoes or passata⁠
Handful of fresh basil leaves – roughly chopped + extra for sprinkling⁠
1 tablespoon olive oil for frying
A generous pinch of salt and pepper for seasoning
For slow roasted tomatoes:⁠
Approximately 250 g cherry tomatoes⁠
A generous drizzle of olive oil⁠
Salt and pepper to taste
To serve: Your favorite pasta
