Instructions

  1. Prepare the Crock Pot: Place the chicken breasts or thighs in the bottom of the Crock Pot.
  2. Add Seasonings: Sprinkle the ground cumin, garlic powder, onion powder, paprika, oregano, salt, and pepper over the chicken.
  3. Add Salsa and Broth: Pour the salsa and chicken broth over the chicken. The liquid should cover the chicken about halfway.
  4. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
  5. Shred the Chicken: Remove the chicken from the Crock Pot and shred it using two forks. Return the shredded chicken to the Crock Pot and stir to combine with the salsa mixture.
  6. Garnish and Serve: Garnish with chopped fresh cilantro and serve with lime wedges if desired. Enjoy over cauliflower rice, in tacos, or as a filling for burritos.
