Healthy Vegetarian Tortilla Soup – Instant Pot

This Vegetarian Tortilla Soup is a great healthy one-pot meal packed with veggies, protein and spicy! Easy Instant pot recipe is gluten free and vegan

Ingredients

  • 1 cup chopped onion
  • 2-3 cloves of garlic, minced
  • 2 cups of vegetables of your choice, I used carrots, cauliflower and broccoli
  • 1 carton or 2.5 cups Low-sodium vegetable broth
  • 1 can of tomato sauce or crushed tomatoes
  • 1 can of black beans, drained + rinsed
  • 1 cup corn, fresh, canned, or frozen
  • juice of 1/2 lemon

For the season:

  • 1 tablespoon coriander-cumin powder
  • 1 large bay leaf
  • 1 teaspoon 21 spice salute, I used Trader Joe’s Brand
  • 1/4 teaspoon smoked paprika, I used Trader Joe’s Brand
  • 1/4 teaspoon ground black pepper
  • Himalayan Pink salt – adjust to taste

  1. First, chop all your vegetables. Open the can of black beans and rinse under cold water.
  2. Then add everything to the main pot. This includes chopped vegetables, corn, black beans, broth, tomato sauce and all seasonings.
  3. Mix them well so that everything mixes well. Close the lid, Valve on the SEAL. Set MANUAL to high pressure for 7 minutes. Set it and forget it until it beeps!!
  4. Allow NPR. natural pressure relief. After the valve drops, open the cap. Squeeze the juice of half a lemon. Mix everything well. Your soup is now ready!
  5. Add all your favorite ingredients or mix crushed tortilla chips into soup for serving! Enjoy!
  6. For a thicker soup, feel free to add some cornbread (broken into pieces) to the soup. All those tortilla chips left at the bottom of the bag can be put to good use here!
  7. There’s nothing better than topping delicious sticky cheese on hot veggies and bean juice. If you are not vegan add any cheese esp. Top with Cojito or Monterey Jack and let it melt a bit.



stove top Instructions:

  1. Bring a large saucepan to medium heat and add a drizzle of your favorite cooking oil. Saute the onion and garlic until the edges are golden, then add all the vegetables, sauté well and cook for 5 minutes.
  2. Then add the vegetable broth, tomato sauce, beans and seasonings; Stir to mix. Let the mixture come to the boiling point. When it starts to boil, reduce the heat to medium-low and cook with the lid closed for 15-20 minutes. The longer you let it cook, the more pronounced the flavor will be.
  3. Grab a bowlful, pour over the ingredients and drink up the delicious vegetarian tortilla soup!
