Instructions:
- Start by prepping the cabbage: Bring a large pot of water to a boil. Carefully remove the core from the cabbage head and place the whole cabbage in the boiling water. Let it cook for a few minutes until the outer leaves soften and become pliable. Remove the cabbage from the water and carefully peel off the softened leaves. Set them aside to cool.
- In a skillet over medium heat, cook the ground beef (or turkey) until browned. Add the chopped onion and minced garlic, and cook until softened.
- Stir in the riced cauliflower, tomato paste, Italian seasoning, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld together.
- Preheat your oven to 350°F (175°C). Lightly grease a baking dish with olive oil or non-stick spray.
- To assemble the cabbage rolls, place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides as you go. Place the rolled cabbage leaves seam-side down in the prepared baking dish.
- Once all the cabbage rolls are assembled, pour the sugar-free marinara sauce over the top, covering them evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30-40 minutes, or until the cabbage is tender and the filling is heated through.
- Serve the stuffed cabbage rolls hot, garnished with fresh parsley.
