Pastry Cream Filled Donuts

Instructions

  1. Prepare the Pastry Cream:
    • In a saucepan, heat the almond milk over medium heat until it begins to simmer.
    • In a bowl, whisk together egg yolks and sweetener until smooth. Stir in almond flour.
    • Gradually add the hot almond milk to the egg mixture, whisking constantly.
    • Return the mixture to the saucepan and cook over medium heat, whisking continuously, until it thickens (about 3-4 minutes).
    • Remove from heat and stir in butter and vanilla extract. Transfer to a bowl, cover with plastic wrap (touching the surface of the cream to prevent a skin from forming), and refrigerate until cooled and set.
  2. Prepare the Donuts:
    • Preheat your oven to 350°F (175°C) and grease a donut pan.
    • In a large bowl, combine almond flour, coconut flour, sweetener, baking powder, and salt.
    • In another bowl, whisk together melted butter, eggs, almond milk, and vanilla extract.
    • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
    • Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
    • Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Allow the donuts to cool completely on a wire rack.
  3. Assemble the Donuts:
    • Once cooled, use a piping bag or a small spoon to fill each donut with the chilled pastry cream.
    • Dust with powdered erythritol if desired.

Storage Methods

  • Refrigeration: Store the filled donuts in an airtight container in the refrigerator for up to 5 days. This helps keep the pastry cream fresh.
  • Freezing: Freeze unfilled donuts in an airtight container for up to 3 months. Thaw before filling with pastry cream.

Variations

  • Chocolate Cream: Add cocoa powder to the pastry cream for a chocolate-filled donut.
  • Berry Filling: Substitute some of the pastry cream with a keto-friendly berry compote for a fruity twist.
  • Glazed Donuts: Dip the donuts in a keto-friendly glaze made from powdered sweetener and a little almond milk.
  • Nut-Free: Replace almond flour with sunflower seed flour for a nut-free version.

Benefits of Ingredients

  • Almond Flour: Low in carbs and rich in healthy fats and protein, almond flour provides a moist and flavorful base for the donuts.
  • Coconut Flour: Adds fiber and helps absorb moisture, contributing to the cake-like texture of the donuts.
  • Cream Filling: The almond milk and egg yolks provide a rich source of protein and healthy fats, while the almond flour helps thicken the filling without adding carbs.
  • Butter: Adds richness and helps achieve a tender texture in the donuts.

Keto Pastry Cream Filled Donuts offer a delicious and indulgent treat while staying within your keto dietary goals. With their soft, fluffy texture and creamy filling, these donuts are perfect for satisfying your sweet cravings. Enjoy them as a special treat or a delightful addition to any low-carb meal plan.
