Shrimp Scampi Pasta Bake
1. Introduction
Traditional shrimp scampi is typically served over noodles straight from the pan, but this version takes it a step further by baking everything together. The result is a dish where the pasta absorbs the garlic-butter flavors while the shrimp stay succulent under a blanket of melted cheese.
2. Ingredients
-
The Seafood: 1 lb large shrimp, peeled and deveined.
-
The Pasta: 12 oz linguine or penne, cooked al dente.
-
The Sauce:
-
1/2 cup unsalted butter.
-
4 cloves garlic, minced.
-
1/2 cup dry white wine (or chicken broth).
-
1 cup heavy cream.
-
1 tbsp lemon juice.
-
-
The Topping:
-
1 1/2 cups shredded mozzarella or Italian blend cheese.
-
1/2 cup grated Parmesan cheese.
-
Fresh chopped parsley.
-
-
Seasoning: Salt, black pepper, and a pinch of red pepper flakes.
3. Instructions
-
Preheat and Prep: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
-
Make the Scampi Sauce: In a large skillet over medium heat, melt the butter. Add the garlic and red pepper flakes, cooking for 1 minute until fragrant. Whisk in the wine, lemon juice, and heavy cream. Simmer for 3–5 minutes until slightly thickened.
-
Combine: Toss the cooked pasta with the sauce until well-coated. Fold in half of the Parmesan cheese.
-
Assemble the Bake: Transfer the pasta mixture to the baking dish. Arrange the raw shrimp in an even layer across the top.
-
Add Cheese: Generously cover the shrimp and pasta with the shredded mozzarella and the remaining Parmesan.
-
Bake: Place in the oven for 15–20 minutes. The dish is ready when the shrimp are pink and opaque, and the cheese is bubbling and golden-brown at the edges.
-
Garnish: Remove from the oven and sprinkle with fresh parsley before serving warm.
4. Variations
-
Vegetable Boost: Stir in 2 cups of fresh baby spinach or steamed broccoli florets before baking for added color and nutrition.
-
Crunchy Topping: Mix 1/2 cup of Panko breadcrumbs with a tablespoon of melted butter and sprinkle it over the cheese for an extra-crispy crust.
-
Scallop Swap: Replace half of the shrimp with bay scallops for a varied seafood experience.
5. Serving and Storage
-
Service: Serve directly from the baking dish. It pairs beautifully with a side of crusty garlic bread to soak up any remaining sauce.
-
Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven at 325°F to prevent the shrimp from becoming tough.
