Sweet Potato Black Bean Chili

Hearty, delicious sweet potato and black bean chili put together in less than 30 minutes! It’s loaded with hearty black beans, fire-roasted vegetables, sweet potatoes, and mildly spiced poblano peppers. A one-pot recipe for a warm and satisfying bowl on a cold, dreary night!

Ingredients

INGREDIENTS FOR SWEET POTATOES BLACK BEANS PEPPER

  • 1 large sweet potato, diced (about 2 cups)
  • 1 poblano pepper or jalapeno, seeded and chopped
  • 3-4 cloves of garlic, minced
  • 1 medium yellow or red onion, chopped
  • 1 15 oz. can black beans, rinsed and drained
  • 2/3 cup fresh or frozen fire-roasted corn
  • 2 14 oz. can fire roasted diced tomatoes
  • 2 tablespoons of olive oil
  • 1 cup of vegetable juice

SPICES AND CYCLES

  • 1 tablespoon of red pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons of paprika
  • 1/2 tablespoon of unsweetened cocoa powder
  • 1 bay leaf
  • a pinch of cayenne pepper (or paprika)
  • salt and pepper, adjust to taste
  • Juice of 1 lemon about 1 tablespoon, adjust to taste

COLLECTIONS (OPTIONAL)

  • 1 avocado, sliced
  • tortilla chips
  • Sour cream; For vegan, use dairy-free
  • grated cheddar cheese; For vegan, use dairy-free
  • fresh coriander, chopped

Instructions

INSTANT SWEET POTATOES BLACK BEAN PEPPER

  1. Turn on the sauté (more) and heat the oil. Add onion, garlic, bay leaf, poblano pepper, sauté for 1-2 minutes.
  2. Then add the dry spices – paprika powder, cumin powder, paprika, cocoa, sauté for 15-30 seconds.
  3. Add a little broth, make the pan shine. TURN OFF the sauté.
  4. Add the sweet potatoes, beans, tomatoes and remaining water, mix quickly. Turn off Instant Pot, vent is off.
  5. Turn pressure cooking (high) ON for 5 minutes. Let the pressure release naturally for about 10 minutes.
  6. Mix it with corn. Turn on the sauté (more), cook the pepper for 1-2 minutes or until desired consistency. TURN OFF the sauté.
  7. Serve sweet potato black bean chili with your favorite topping!



STOVE SWEET POTATOES BLACK BEAN PEPPER

  1. To cook on the stove, follow the same steps as in the recipe. Bring mixture to a boil, reduce heat to medium-low and simmer for about 20-25 minutes or until desired consistency is reached.
