Instructions
- Sear the Beef:
- Heat the oil in a large pot or Dutch oven over medium heat.
- Add the beef cubes and sear them until they are browned on all sides. Remove the beef to a plate and set aside.
- Sauté:
- Add the chopped onions to the same pot and sauté for about 3-4 minutes until softened.
- Add the garlic and sauté for 1 more minute until fragrant.
- Add Paste and Tomatoes:
- Stir in the tomato paste and cook for 1 minute.
- Pour in the canned diced tomatoes or fresh grated tomatoes. Let it simmer for a few minutes.
- Add Liquid and Meat:
- Return the seared beef to the pot.
- Add the beef broth or water, bay leaf, salt, pepper, thyme, and the Worcestershire sauce (if using).
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 1 to 1.5 hours, or until the meat is tender.
- Add Vegetables:
- Once the meat is tender, add the chopped potatoes and carrots.
- After 10 minutes, add the green beans.
- Continue to simmer for another 20-30 minutes, or until all the vegetables are tender.
- Final Check:
- Check and adjust the salt and seasoning levels.
- Remove the bay leaf before serving.
Serving
Serve the soup hot. You can present it with crackers or crusty bread slices, just like in the picture.
