I found in my freezer a small container of beef. I wasn’t sure what is was until I defrosted it. My grocery store labels it as soup shanks or beef for soup. Typically a small package w a center bone & beef around it. I’m sure It was less than 1 1/2 lbs. Well I had previously cooked thisbeef but didn’t use it apparently. So I froze it and it had some broth in the container too. Soooo I started out yesterday w this fully cooked small piece of beef and bone. Put it crock pot w a can beef broth about cup of water 2 cans diced tomatoes two bay leafs celery leaves and parsley leaves and 4 whole peppercorns. Let it cook all day on low 8 hrs.
Sauteeed a medium diced onion in butter w three cloves gArlic and added to the soup. Added some leftover chicken broth – maybe a cup — chopped carrots celery and one medium potato. I also added about half cup tiny pasta acini di pepi. Additional celery leaves and parsley few drops Worcestershire sauce. Few drops kitchen bouquet a d spoonful olive oil. Turned on high temp. Cooked til veggies were tender. This is to the best of my memory I didn’t use a specific recipe !!
