Chicken and Avocado Burritos
1. Introduction
These burritos are a fresh alternative to traditional heavy, bean-based versions. The combination of warm, shredded chicken and cool, lime-infused avocado creates a balanced bite, while the addition of fresh cilantro and parsley adds a bright, herbal finish.
2. Ingredients
-
The Wrap: 4–6 large flour tortillas.
-
The Protein: 2 cups cooked shredded chicken breast (rotisserie chicken works great).
-
The Creamy Layer:
-
3 large ripe avocados, mashed.
-
1 tbsp lime juice.
-
1/2 tsp salt.
-
-
The Fresh Elements:
-
1/2 cup fresh cilantro, chopped.
-
1/2 cup diced avocado chunks for extra texture.
-
-
Optional: 1 cup shredded Monterey Jack cheese or a dollop of sour cream.
3. Instructions
-
Prepare the Avocado Mash: In a medium bowl, mash the avocados with lime juice and salt until creamy but still slightly chunky.
-
Warm the Tortillas: Briefly heat the tortillas in a dry skillet or microwave for 10 seconds to make them pliable.
-
Assemble: Spread a generous layer of the mashed avocado down the center of each tortilla.
-
Add Filling: Top the avocado with a heap of shredded chicken and additional fresh avocado chunks.
-
Garnish: Sprinkle plenty of fresh cilantro over the filling.
-
Roll: Fold in the sides of the tortilla, then roll tightly from the bottom up to seal the contents.
-
Toast: Place the burritos seam-side down in a hot, lightly oiled skillet. Cook for 1–2 minutes per side until the tortilla is golden brown and crisp.
-
Serve: Slice the burritos in half diagonally to show off the layered green and white interior.
4. Variations
-
Spicy Garlic: Add a teaspoon of minced garlic and a dash of hot sauce to the avocado mash for a zesty kick.
-
Veggie Boost: Add corn salsa or black beans to the filling for extra fiber and color.
-
Herb Swap: If you aren’t a fan of cilantro, replace it with fresh flat-leaf parsley or chives for a different herbal profile.
5. Serving and Storage
-
Service: Serve these burritos warm, perhaps with a side of salsa verde or extra lime wedges.
-
Storage: Because of the fresh avocado, these are best enjoyed immediately. If you need to store them, keep the filling components separate and assemble just before eating to prevent the avocado from browning.
