Coffee Cheesecake



Ingredients:

For the crust:

  • 1 1/2 cups vegan graham cracker crumbs (check the label to ensure they’re vegan)
  • 1/4 cup melted vegan butter or coconut oil
  • 2 tablespoons maple syrup or agave nectar

For the filling:

  • 1 1/2 cups raw cashews (soaked in hot water for 1 hour or in cold water overnight)
  • 1/2 cup strong brewed coffee, cooled
  • 1/2 cup coconut cream (the thick part from a can of full-fat coconut milk)
  • 1/2 cup maple syrup or agave nectar
  • 1/4 cup melted coconut oil
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch or arrowroot powder (to thicken)

For the coffee drizzle (optional):

  • 1/4 cup strong brewed coffee, cooled
  • 2 tablespoons maple syrup or agave nectar
