Step-by-Step Preparation
1. Infusing the Milk
Pour the milk into a saucepan. Use a vegetable peeler to remove wide strips of lemon zest, avoiding the bitter white pith. Add the zest and vanilla to the milk and heat over medium until it just begins to simmer. Remove from heat and let it steep for 15 minutes to allow the lemon oils to infuse.
2. Preparing the Base
In a separate bowl, whisk the egg yolks and sugar together until the mixture becomes pale and slightly thickened. Sift in the cornstarch and whisk until you have a smooth, lump-free paste.
3. The Tempering Process
Slowly pour a small amount of the warm infused milk (through a strainer to catch the zest) into the egg mixture while whisking constantly. This prevents the eggs from curdling. Once combined, pour the egg mixture back into the main saucepan with the remaining milk.
4. Thickening to Perfection
Place the saucepan back over low-medium heat. Whisk continuously as the mixture heats up. You will notice it starts to thicken into a beautiful, glossy cream. Once it reaches a heavy boil, whisk for one more minute, then remove from heat and stir in 2 tablespoons of fresh lemon juice for an extra kick.
5. Cooling
Transfer the cream to a clean glass bowl. Press a piece of plastic wrap directly onto the surface of the cream to prevent a “skin” from forming. Let it reach room temperature, then chill in the refrigerator for at least 2 hours before using.
