SRIRACHA NOODLES WITH TOFU AND BROCCOLI

Delicious, spicy and with a kick of heat from sriracha, these Sriracha Noodles are the perfect quick and easy dinner. Topped with delicious baked tofu and tender broccoli for a full and satisfying meal.

TOFU

  • 1 block extra firm tofu, pressed and drained then cut into cubes
  • 1 tablespoon of nutritional yeast
  • 1 tbsp soy sauce
  • 1 tsp garlic chili sauce

SAUCE

  • 3 tbsp soy sauce
  • 1 tsp garlic chili sauce
  • 1 tbsp sriracha
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup
  • 1 tbsp rice wine vinegar
  • 1 tsp fresh minced ginger
  • 2 scallions, sliced reserving the green ends for garnish
  • 1 tsp cornstarch
  • 1/4 cup of water

NOODLES

  • 1/2 cup mushrooms, sliced (optional)
  • 1 head of broccoli, cut into bite size florets
  • 1 red bell pepper, diced
  • 4 servings of your favorite stir fry noodles, prepared according to package



INSTRUCTIONS

  1. Set the oven to 400F. Prepare tofu by adding cubes of nutritional yeast, soy sauce, and garlic chili sauce to an airtight container. Close the container and shake gently to coat. Place the tofu pieces on a lined baking sheet and bake for 20 minutes.
  2. Mix all the ingredients for the sauce in a bowl and keep it aside.
  3. Bring an oiled pan to medium heat and add your mushrooms and sauté until most of the liquid has been released and lightly browned. Remove from pan and set aside.
  4. Add the broccoli to the same pot with ¼ cup of water, cover with a lid and steam for about 3-4 minutes until the florets of the broccoli are bright green.
  5. Remove the lid and add the bell pepper and sauté for another minute.
  6. Add the boiled noodles, mushrooms and pour the sauce over it. Mix everything well and cook for a minute to allow the sauce to thicken and stick to the noodles.
  7. Top your noodles with tofu and garnish with additional scallions before serving.

NOTES

  • If you prefer your noodles to be more spicy, add more sriracha to the sauce. I start with about 1 tablespoon and then gradually add more as per preference.
  • Cooking time will depend a lot on the types of noodles you use. I used noodles from the Fortune Foods brand, which only require a quick microwave step. If you are using noodles that need to be boiled, cook according to the directions for 1 minute, as they will continue to cook with the sauce.
  • Feel free to discard or replace vegetables as you wish. If you’re replacing vegetables, be sure to adjust their cooking times to make sure you don’t under- or over-cook.
