for tofu
Press tofu in the tofu press for 10-12 minutes, squeezing the knobs every 3-4 minutes. Drain the water.
Cut the tofu into cubes.
Season the tofu with spices.
Sauté tofu in a medium skillet over medium heat until golden brown.
Set aside.
for soup
Heat oil in a stock pot. Saute the onions for 2-3 minutes.
Add chopped carrots and celery to the onion mixture. Saute until all the vegetables are soft.
Add vegetable stock to the broth. Boil slowly.
Add the pasta to the pot, boil for 8 minutes or until the pasta is cooked.
Add cooked tofu and serve.
