Diabetic-Friendly Texas Sheet Cake
1. Introduction
Traditional Texas Sheet Cake is known for its thin profile and boiled chocolate frosting that is poured over the warm cake. This diabetic-friendly version swaps granulated sugar for a heat-stable sweetener and incorporates healthy fats, resulting in a fudgy texture topped with crunchy pecans.
2. Ingredients
-
The Cake Base:
-
2 cups almond flour or a low-carb baking blend.
-
1 cup granulated erythritol or monk fruit sweetener.
-
1/4 cup unsweetened cocoa powder.
-
1 tsp baking soda and 1/2 tsp salt.
-
1/2 cup unsalted butter.
-
1/2 cup unflavored Greek yogurt (adds moisture without sugar).
-
2 large eggs.
-
1 tsp vanilla extract.
-
-
The Chocolate Frosting:
-
1/4 cup unsalted butter.
-
3 tbsp unsweetened cocoa powder.
-
1/4 cup milk (unsweetened almond or soy works well).
-
1/2 cup powdered sugar substitute.
-
-
The Topping:
-
1 cup chopped pecans or whole pecan halves.
-
3. Instructions
-
Prep: Preheat your oven to 350°F (175°C). Grease a 15×10-inch jelly roll pan.
-
Boil the Liquids: In a small saucepan, combine the butter and cocoa powder. Bring to a gentle boil, then remove from heat.
-
Mix Dry & Wet: In a large bowl, whisk together the flour, sweetener, and baking soda. Stir in the warm butter mixture, followed by the Greek yogurt, eggs, and vanilla until smooth.
-
Bake: Pour the batter into the prepared pan and spread evenly. Bake for 15–20 minutes or until a toothpick comes out clean.
-
Prepare the Frosting: While the cake bakes, combine the frosting butter, cocoa, and milk in a saucepan and bring to a boil. Remove from heat and whisk in the powdered sweetener until smooth.
-
Assemble: Pour the warm frosting over the warm cake immediately after taking it out of the oven.
-
Garnish: Arrange the pecan halves or chopped pecans evenly across the top while the frosting is still wet.
-
Cool: Allow the cake to cool completely so the frosting can set into a fudgy layer.
4. Variations
-
Peanut Butter Twist: Swirl 2 tablespoons of natural peanut butter into the frosting for a “Buckeye” style flavor.
-
Espresso Kick: Add 1 teaspoon of instant coffee granules to the cake batter to intensify the chocolate flavor.
-
Nut-Free: Replace pecans with toasted sunflower seeds or shredded unsweetened coconut for added texture.
5. Serving and Storage
-
Service: Slice into small squares; because the cake is rich and baked in a thin sheet, a small portion is very satisfying.
-
Storage: Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week.
-
Freezing: This cake freezes exceptionally well. Wrap individual squares in plastic wrap and store in a freezer bag for up to 3 months.
