Homemade Pineapple Cream Cheese Pie Recipe

3. Instructions

1. Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch pie plate. Chill for 30 minutes (or bake at 175°C for 8 minutes for a crispier base).

2. Mix the Cream Base: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the whipped topping. Spread this mixture evenly over the bottom of the crust.

3. Prepare Pineapple Layer: In a separate bowl, stir together the drained crushed pineapple and the dry vanilla pudding mix until thickened.

4. Layer and Chill: Spread the pineapple mixture over the cream cheese layer.

5. Garnish: Decorate with pecans and toasted coconut as shown in the featured slice.

6. Set: Refrigerate for at least 4 hours (preferably overnight) before slicing to ensure the layers stay distinct.

4. Variations

• Pineapple Fluff Pie: Fold the pineapple mixture directly into the cream cheese layer for a more unified, airy “fluff” texture.

• Piña Colada Twist: Use coconut pudding mix instead of vanilla and add a splash of rum extract to the cream cheese layer.

• Golden Cherry: Top the pie with maraschino cherries for a classic retro aesthetic.

5. Serving and Storage

• Serving: Use a sharp, warm knife to get clean slices that showcase the beautiful white and yellow layers.

• Storage: Keep covered in the refrigerator for up to 3 days.

• Freezing: This pie freezes well for up to 1 month. Thaw in the fridge for 2 hours before serving for a semi-frozen “icebox cake” experience.

6. Benefits

• No-Bake Ease: Perfect for hot summer days when you don’t want to turn on the oven.

• Texture Contrast: Offers a satisfying mix of crunchy crust, creamy filling, and fibrous fruit.

• Fruit Forward: Using crushed pineapple provides natural acidity that cuts through the richness of the cream cheese.
