Teriyaki noodles

INSTRUCTIONS
Prepare the vegetables and set aside.
Cook the noodles according to package directions, do not overcook! Drain and rinse thoroughly with cold water. Pour some oil and set aside to prevent sticking.
While the noodles are cooking, prepare the teriyaki sauce: Add the sauce ingredients to a small sauce pan (pot). Bring to a boil, reduce the boil and cook for 5 minutes. Set aside (sauce will thicken as it cools).
Heat a large nonstick skillet or wok over medium-high heat, add 1 tablespoon vegan butter, mushrooms, and a pinch of salt and pepper. Cook, stirring, for 2-3 minutes.
Then add the cabbage, grated carrots and the remaining butter. Fry for about 3 minutes until the cabbage is slightly cooked. Stir in snow peas and green onions and cook for another minute.
Reduce the heat to medium, stir the noodles, then stir in 1/2 cup of the teriyaki sauce (reserve the rest of the sauce for serving) See the post above for step-by-step photos.
Serve in individual bowls with chopsticks. Add a few spoonfuls of reserved sauce to each bowl and top with some green onions. Entertainment!
NOTES
I think the teriyaki sauce has the perfect consistency without adding cornstarch.
I often make this with just mushrooms, kale, green onions, and noodles, so don’t worry if you don’t have the right veggies!
Saving some sauce for the noodle bowls is the key to saucy slurry noodles!
Mirin and plum sauce can usually be found in the Asian section of your grocery store. For plum sauce, I always make sure the ingredients include plums, pumpkin, or sweet potatoes, so check the label.
Noodle options: Spaghetti or spaghetti noodles are my absolute favorite for this dish and I always keep them in the pantry! however, you can use fresh yakisoba noodles, which is a type of ramen and is normally found in the produce section of the grocery store. Chow Mein noodles are also a great choice, and even udon noodles (frozen are best)
For gluten-free: use rice noodles or soba noodles; Be sure to check the label because some brands of soba noodles (buckwheat noodles) contain wheat.
You can add crispy tofu or seitan to the stir-fry for extra protein!
