  • 1-inch fresh ginger (finely grated)

  • 2 garlic cloves (minced)

  • 1–2 red chilies (finely chopped, or 1 tsp chili flakes)

  • 2 tbsp soy sauce (low sodium preferred)

  • 1 tbsp rice vinegar (or lime juice)

  • 1 tsp brown sugar or honey

  • 1 tsp toasted sesame seeds (optional)

  • Salt to taste
