No-Bake Granola Cups


  1. In a large mixing bowl, combine the rolled oats, almond butter, maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt. Stir until well-combined and the mixture is sticky.
  2. Grease a muffin tin with cooking spray. Using your hands, press the granola mixture into each muffin cup, creating a small well in the center.
  3. Chill the granola cups in the refrigerator for at least 30 minutes, or until firm.
  4. Once the granola cups are firm, remove them from the muffin tin and fill with dairy-free yogurt or your choice of filling/topping. Add fresh fruit, nuts, or seeds as desired.
  5. Serve and enjoy!

Note: You can also try different variations of this recipe by using different nut butters or adding ingredients like chia seeds or shredded coconut. These granola cups can be stored in an airtight container in the refrigerator for up to one week.
