Quesadilla

Ingredients:

1 small (70g) carrot, peeled and sliced
2 tbsp. tomato paste
1 tsp. paprika
1/2 tsp. garlic powder
4 tbsp. nutritional yeast
800g Can white beans, rinsed and drained
Salt and pepper to taste

Directions:
Add carrot slices to a small pot. Cover with water and cook for about 10 minutes or until soft. Drain and add to a bowl along with all the other ingredients. Mash with a potato masher or blend mixture in a food processor
Spread mixture on 6 tortillas
preheat a non stick pan over medium heat and add one tortilla
Add some cooked vegetables (I like to use bell peppers, onion, kidney beans and corn), mashed avocado and another tortilla on top (side with bean paste facing down)
Cook for 2-3 minutes, then flip over and cook for another 2 minutes
