Instructions:

Sauté the veggies – In a large pot, heat some oil over medium heat. Add the onion, carrots, and celery. Cook until softened (about 5 minutes). Add the garlic and cook for another minute.

Add split peas & broth – Stir in the split peas, broth, bay leaf, and thyme (if using). If using ham, add it now. Bring to a boil.

Simmer – Reduce heat and let it simmer uncovered for 45–60 minutes, stirring occasionally, until the peas break down and the soup thickens. Add more broth or water if needed.

Season & serve – Remove the bay leaf. Add salt and pepper to taste. Blend if you prefer a smoother texture. Serve warm with crusty bread.
